Italian Finger Biscuits
(Serves 2)
Italy is famous for both its food and wine and these delightful finger biscuits are originally from Tuscany, where they are served with local sweet wine as a nice finish to a meal. Simple and quick to bake, why not try them at home for your next autumn dinner.
Ingredients:
100g softened butter
100g icing or normal sugar
100g plain flour
3 egg whites
Method:
1. Mix butter and sugar until you get a cream (if you use a electrical egg beater, you must choose the lowest speed)
2. Carefully add egg whites and slowly add the flour until it is all mixed together (you will obtain a creamy mixture of all ingredients).
3. Grease a baking tin with butter.
4. Place the mixture in on the baking tray in small spoonfuls (approx 2.5cm round). Ensure they are well spaced (in the oven the biscuits will become flat; see the photo).
5. Put the tray into the oven (220°) for 5 minutes.
6. Once baked, leave the biscuits to cool and once cool, remove from baking tray.
