Slow Roasted Duck
(Serves 3)
Cape Town, South Africa is a cosmopolitan city featuring a wide range of fantastic places to dine. Built in 1799, the Vineyard Hotel & Spa, just 15 minutes from the city centre features classic Cape Georgian architecture and is an ideal base to include in your South Africa itinerary, or a must-see location for a superb meal. The chef has kindly shared his recipe for Slow Roasted Duck for you to try at home.
Ingredients:
- 50 ml of sweet soy sauce
- Half cup of plum sauce
- 50ml oyster sauce
- 2 tsp sesame oil
- A pinch of chinese 5 spice
- Oil for deep frying
Duck
- 1 whole duck spatchedcocked
Saute
- 1 cup of large cut spring onion
- 2 cups been sprouts
- 9 shitake mushrooms sliced relatively thick
- 1 tsp sesame oil
- 1 tbs fish sauce
Method
1. Combine marinating ingredients by stirring together. Pour over duck and marinate overnight. Keep a small amount of the marinade separate for later.
2. Remove duck from marinade, place skin side up on a cooling rack, place cooling rack on a tray and slow roast in preheated oven for 4 hours at 107 degrees Celsius.
3. Once cooked, allow to cool, remove meat from the bone by hand and portion by cutting into large bite size pieces.
4. Deep fry pieces of duck in vegetable oil until edges are crispy and sauté in pan with marinade that was kept separate. This is merely to glaze.
5. In a separate medium heated sauce pan sauté mushrooms with a dash of olive oil for a couple of seconds, add spring onions, giving it a couple of seconds, add bean sprouts to just heat. Add sesame oil and fish sauce.
6. Serve on a plate keeping duck and vegetables separate.
