Mauritian Chicken Curry
(Serves 4 people)
One of the great things about any holiday is trying new foods. Mauritian cuisine is a blend of flavours and has Creole, Indian and Chinese influences. Chef Nicolas Baubé, from 'La Pomme D'Amour', one of the restaurants at the Hilton Mauritius shares his recipe for a delicious Mauritian chicken curry. Try it at home!
Ingredients:
* 720g chicken fillets
* 120g chopped onion
* 5g fresh ginger & garlic
* 50g finely chopped coriander
* 30g curry powder
* 10g saffron powder
* 1 tablespoon finely chopped curry leaves
* 3 finely chopped tomatoes
* 3g (or pinch) thyme & parsley
* Salt & pepper to taste
* Oil
Method
1. Cut the chicken into cubes.
2. Chop onion, ginger, garlic, thyme, parsley, coriander, curry leaves and tomato. Sprinkle with salt and pepper.
3. Fry the chicken in oil. Cook gently until it browns. Place chicken to one side.
4. Heat the oil and fry the onion until soft, then add chopped garlic, ginger, thyme, parsley, curry leaves and tomato. Cook for a few minutes.
5. Add the curry and saffron powder and stir on moderate heat about 5 minutes.
6. Pour some water and simmer for approx 15 minutes
7. Add the fried chicken into the curry sauce
8. Simmer for a few more minutes, then sprinkle with coriander leaves and season with salt and pepper
9. Serve with boiled rice.
