Choosing where to go on holiday can be difficult in itself, however when you have children, the decision for a family holiday can become that little bit harder. Many of our key2holidays consultants have made this decision themselves and can suggest the perfect destination for your perfect family holiday - whether it is based on adventure, education, culture, sports or a combination.

It is always fun to try a new recipe and our friends at the Entabeni Safari Conservancy, South Africa have sent the following through. This soup won the award for the best dish at the Bush Banquet in Hoedspruit.

Tomato soup with Pesto Crostini

Tomato Soup:
3kg ripe tomatoes
500g onions
500g leeks
500g carrots
300g Celery

1 - Cut all ingredients into rough chunks just about bite size and place together in a large pot.
2 - Fill the pot with cold water to just level with the ingredients.
3 - Bring to boil and simmer until all the vegetables are very soft.
4 - Remove from heat and let stand for about 20 min.
5 - Blend the mixture in the pot with a stick blender.
6 - Strain by pushing through a sieve.

Pesto Crostini
Spread 1cm slices of French loaf with basil pesto and olive oil. Toast directly under the grill or over coals.

To serve:
Heat the required amount of tomato soup and add grated parmesan, salt and pepper to taste. Add a little cream just before serving with a slice of crostini.
