Pan Fried Turbot with Spiced Butternut Squash and Crispy Sweet Potato

(Serves 4 people)

Pan Fried Turbot with Spiced Butternut Squash and Crispy Sweet Potato

The Dinarobin Hotel Golf & Spa is the place to go if you want to learn the secrets of Creole cooking. Executive chef, Stefano Fontanesi, organises courses where guests can learn about the herbs and spices used in Creole cuisine; He has also kindly provided us with a dish bringing that unmistakable Mauritian flavour to your own home.

Ingredients:

* 4 fillets of Turbot about 120 grams   each
* 500 grams of sweet potato
* 1 egg yolk
* 50 grams of flour
* Pinch of vanilla powder
* 150 grams of Kadaif (fine    spaghetti-like pastry) OR bread    crumbs
* 100 grams of tiger prawns    (heads off)
* 500 grams of butternut squash
* 50 grams of mange tout
* Half a litre of fish stock
* 10 grams each of coriander,    sesame and cumin
* Pinch of salt
* Ground black pepper
* Olive oil


Method

1. Cut rectangles out of the butternut squash approximately 10cms long, 4cms wide and marinate in olive oil, coriander, sesame and cumin for four hours. Retain the butternut squash skin for the sauce.
2. Fry the prawns in olive oil until well cooked. When cool chop into small pieces and put to one side.
3. Cook the sweet potatoes in the oven until soft. Leave to cool and then remove the soft potato from the skins. Mix the soft potato with the beaten egg yolk, prawns, flour, vanilla and season to taste. Divide the mixture into eight balls and roll the balls in the Kadaif or breadcrumbs and pop in the fridge.
4. Cook the retained butternut squash skin with the fish stock for 30 minutes. Remove the butternut squash skins and whisk in 2 centilitres of olive oil and keep warm.
5. Pan fry the butternut squash rectangles and the turbot fillets in olive oil and keep warm.
6. Deep fry the sweet potato balls and cook the mange tout in boiling water.
7. Put the butternut squash on a plate; place a slice of fish on top. On a bamboo stick place two crispy potato balls with the mange tout.
8. To finish the dish, drizzle a little of the warm butternut sauce over the dish.
