One of the great things about any holiday is trying things for the first time. This also goes for the local cuisine. In this edition we transport the spices of Mauritius with an extraordinary dish for you to try at home. This recipe comes from the Movenpick Resort & Spa, Mauritius.

Beef Rougaille and saffron rice

Key2 Recipes, Beef Rougaille and saffron rice

INGREDIENTS:
500g Beef cut in strips
500g Tomatoes
100g Onion
100g Fresh coriander
20g Chopped garlic
10g Chopped Zerzembe
20g Fresh thyme
30g Cumin powder
10cl Huile soja Saffron Rice
1kg Basmati rice
1,5 litres Water
25g Curcuma
50g Butter
30g Garlic

PREPARATION:
1. Marinate beef with salt, pepper, cumin powder and soya oil.

2. Panfry slowly in a hot pan the onion, garlic, ginger and salt without giving too much color and cook it until fresh tomatoes are becoming soft.

3. Add the beef to the sauce; add at the last minute the fresh coriander.

4. Stir fry the Basmati rice with garlic curcuma and butter.

5. Add water to the rice and cook until there is no water left.
